What is wagyu?
Wagyu is an exquisite type of marbled beef obtained from Japanese cows grown using a special technology. Wagyu breed, genetically predisposed to marbling of meat (accumulation of fatty layers) and high content of oleic acids (omega-3 and omega-6). Marbled beef is not only more tender and tasty, but also more healthy than ordinary beef.

History of meat
In the middle of the 19th century, an old ban on eating the meat of animals was lifted in Japan. This period can be considered the birth of Wagyu meat. Isolation in livestock breeding led to the formation of purebred cows in Japan. “Wa” means “Japanese”, “gyu” means “cow”, so the literal translation is “a Japanese cow”.

Production technology
For the first six months, the calves feed on selected milk and graze on the meadows on their own. During this period, farmers practically do not interfere in their lives. After some time, the cows are placed in soundproof rooms and fitted with reins, firstly to limit their movement, and secondly, to promote an even distribution of fat layers in the meat. Their diet includes selected grains and expensive fresh beer (or sake). For exercise, they receive manual or vibro massage and often listen to classical music.

Health benefits
High in fat, Japanese beef is one of the best natural diet foods in the world. Wagyu marble meat, rich in omega-3 and omega-6 fatty acids, which is very good for the cardiovascular system. Choline in meat significantly improves the metabolism of nerve tissues, prevents the formation of gallstones, normalizes fat metabolism and helps to reduce weight. Also this meat is rich in B12 and easily digestible iron. However, it is worth eating marbled meat in moderation: in Japan, the classic portion for one person does not exceed 150 grams.

Cooking recipes
Wagyu is suitable for both classic steaks and other dishes. Sukiyaki is a traditional Japanese marbled beef dish with tofu, mushrooms and vegetables. Another original way of eating is to dip thinly sliced strips for a few seconds in boiling water, soak it in raw egg yolk and serve immediately.
